Vegan Tart with Pink Pitaya
Ingredients for the vegan crust:
1 cup oats
3 tbsp cacao powder
1 tbsp almond butter
1 tbsp coconut oil
1 tbsp rice sirup
20 pitted dates
3 tbsp coconut water
Blend all ingredients in a high speed blender and press it into your favourite mould,…then place it in the freezer,….
sometimes I make the filling one day before I need the cake and let sit the crust overnight in the freezer.
for the filling I use:
1 can of coconut milk
3 tbsp agave sirup or other sweetener
1 big tbsp pink Matcha powder from @theorganiclab.eu
1 big tbsp Red Matcha powder from @theorganiclab.eu
Or 1 big tbsp of Pink Pitaya
1 tbsp tapioca starch
3 tbsp agar agar
Now pour the coconut milk in a saucepan and bring it to a simmer. mix sweetener and fruitpowder and simmer for 3 minutes then mix it well and now you can add tapioca starch and agar agar,…cook it again for a few minutes and let it cool down,….when the filling is lukewarm you can put the mixture on the crust and let it sit in the fridge for about 3 hours,…before serving you can decorate at with whatever you like,….
